Adirondack Fox Brewery Shares Full Story Behind Its Family-Built Vision

PLATTSBURGH — Following recent coverage of its grand opening, Adirondack Fox Brewery is offering the community a fuller look at the decade-long family effort that brought the new business to life.

In a statement, founding member and senior owner Scott Mischler thanked reporter Kim Dedam for her article, while noting that the family hoped to "tell everyone a more complete history of the Adirondack Fox Brewery" to correct several omissions. As the document explains, "the vision of a family brewery was initiated by Greg Mischler, Scott Mischler, Michelle Mischler and Pat Rascoe" eleven years ago.

A Family Venture Years in the Making

The idea for the brewery grew from the close relationship between the Mischler and Rascoe families. Pat Rascoe, an avid homebrewer, and his cousin Greg Mischler with his wife shared a passion for craft beer. Scott Mischler, interested in new business opportunities, helped solidify the plan, and the group settled on the name Adirondack Fox Brewery.

After years of homebrewing, the team began producing beer for Livingood's Brewpub in Peru in 2024. The turning point came in fall 2025, when the former Oval Brewery building became available. The families purchased the property in December 2025 and immediately began the extensive work needed to transform it. As the document notes, "demolition and renovation occurred, supplies were purchased, beer was made and all in anticipation of the April grand opening."

A Community Effort

While ownership of Adirondack Fox Brewery rests with Scott and Celia Mischler and Greg and Michelle Mischler, the families emphasize that the project was truly a collective effort.

Pat Rascoe and Scott Mischler purchased the historic building, and a long list of relatives and friends contributed to the renovation. Pat, Scott, and Pat's sons Ethan and Liam handled much of the demolition. Pat's brother Shawn completed key woodworking. Close family friend Eric Carey provided locally milled wood used throughout the interior plus countless hours providing construction experience and assistance.

Additional help came from Patrick Mischler, Allison Rascoe—described in the document as a "decorator extraordinaire"—Michelle and Greg Mischler, cousin Jackie Stewart, Debbie Rascoe, and Pat's daughter Ella, who created artwork and décor. Tim Meyer, Michelle's brother, provided business plan and beer design consultation and Michelle's father, Bill Meyer, funded the original research and development. Brewing responsibilities are shared by Pat Rascoe and Greg, with Pat producing most of the delicious beers currently on tap.

Above all else, our outstanding employees who have been the face of our business, have endured the total chaos of a business opening and what it brings with it. Their enthusiasm and ability to provide exceptional customer service, even with the daily challenges, is recognized and we couldn't have done it without them.

Honoring a Historic Firehouse

The brewery occupies the former Plattsburgh Air Force Base fire station, a structure built around 1895 and used continuously until the base closed in 1995. A mid-20th-century addition expanded the number of truck bays, and the owners say they welcome stories from veterans who served there.

Expanding Offerings and Looking Ahead

Since opening, Adirondack Fox Brewery has broadened its menu to include house-made beer, seltzer, craft coffee, New York wines, spirits, meads, and packaged cocktails.

The families expressed gratitude to the community for its support, writing, "Thank you to everyone who made our grand opening a success and we hope to serve you in the future."
